Opus One 1999 Feb-03 (19-21 – very fine/excellent)
Quite savoury, almost smokey nose that seems more Bordeaux than Napa. Good acidity and balance on the palate. Well-knit tannins with blackberry, plum and damson. Very solid and well-structured, certainly better than the 1996. Much more subtle than I expected. Very fine, but leave for 5 years
These are notes I found from 2003, at that time it was suggested it needed 5 years. That would indicate 2008 the year this wine reaches maturity. However if you wanted to drink now, you could always decant it and let it breathe for a few hours and serve with a prime rib dinner. Food and air do great things for a young wine.
I have personally had the pleasure of tasting Opus One. To this day I feel it is the liquid sex of wine.
Aging wine can produce more wonderful flavors and enhance the drinking experience (Opus One IS a drinking experience) however, there is a point where wines will start to "degrade" and loose its potential.
for example:I loved a 77 appertif, but didn’t like the 78.
I would recommend drinking the Opus this year…perhap for New Year. If you save it for more than another year, the flavor will prob begin to degrad.

There is No Time like the present. Is that a screw top bottle? Opus is MD-20-20 wino wine really.

Unless you’re a serious collector, just wait until your next special occasion, like Christmas or a birthday or anniversary. It’s drinkable right now.
