I usually use Chardonnay or Reisling… You can get a reasonable bottle for less than $10 (probably closer to $5)…. California wineries are good (whatever you get, do NOT get a white zinfandel! It’s really a "pink" party wine)

a nice dry, crisp white wine works well in seafood, a burgandy in beef dishes is also nice. You will have to experiment to see what appeals to your taste,

Taste the wine and determine if it has the flavor that will enhance the other ingredients you are using. Why do you think a chef always has a glass of wine in his hand?
