Chardonnay and Sauvignon Blanc are good to use when a recipe calls for a dry white wine. For a sweet white wine use Riesling. Ports and Muscats are also sweet wines.

I would be able to suggest several combinations, but your best bet is to look for french websites (in english if you want) because they tend to establish wine choices in accordance with food. Some french restaurants now design the menu in accordance to their wine stocks!
