About a week ago I hosted a get-together and bought too much wine. Since then, I have been chilling a prosecco (sparkling) in the fridge that I don’t see myself drinking until maybe the next gathering. I need to figure out how to store it for the next few months until I’m ready to drink it.
If I take it out of the fridge and let it settle back to room temperature, and then chill it again on the day I want to drink it, will it be ruined from all the changes in temperature?

There is absolutely no problem with doing this, as long as you don’t allow it to heat up over 65 degrees between now and then.
But why wait so long to enjoy it? Prosecco goes wonderfully with pasta, indian food, thai food, spicy food, and even brunch. I think that you should order some Palak Paneer and Garlic Naan and pop that bubbly!

It’s not ideal to do that, but it won’t be ruined. Just try to make sure that where you’re putting it isn’t hot. Keep it in the 50′s or 60′s if possible.
